Butter chicken

Ingredients:

3 free range chicken breast

3 tbsp cumin

3 tbsp nutmeg

3 tbsp tumeric

1 tbsp garlic, minced

1 diced onion

3-4 tbsp tomato paste

300ml cream (I use soy cream)

2 tsp garam masala

1 can chickpeas, strained (optional)

2 cups spinach (optional)

Instructions:

  1. Cut the chicken breast into small chunks and mix through cumin, nutmeg and tumeric. Ideally let marinate for 12 hours but 1 hour is fine.

  2. On a medium heat add a dash of oil to a pan, add onion and garlic and cook until the onions are translucent.

  3. Once translucent add the chicken and chickpeas to the pan.

  4. Once the chicken is cooked add tomato paste and stir then add the cream and stir again.

  5. Add the spinach and let it cook. Once cooked add the garam masala and let it simmer for a few minutes.

  6. Serve with rice, naan and popadoms.
