Lemon Tart

Vegetarian

Servings: 8-10

Ingredients:

Dough:

100g Butter

1/2 cup Sugar

1 Egg

1 cup Plain Flour

1 cup Self-Raising Flour

Batter:

1/2 cup Sugar

Peeled rind from 2 Lemons

Juice from 2 Lemons

1 cup Sour Cream (250g)

2 tsp Cornflour

3 large Eggs

Instructions:

  1. Soften, but don’t melt the butter, Add the sugar and egg and beat until well combined.

  2. Stir in the unsifted flours and mix well to form a dough.

  3. Preheat oven to 150degC, grease a 20cm pie dish and gently press the pastry into the pan and trim off the excess.

  4. Measure the sugar into a food processor, using a potato peeler thinly peel the rind of the lemon and add the rind to the sugar then process until the rind is cut finely through the sugar.

  5. Mix the lemon juice with the cornflour, add the sour cream and lemon juice mixture to the sugar then process until smooth and the sugar has dissolved.

  6. Add the eggs one at a time with the processor running.

  7. Pour the filling mixture into the pastry base and bake for 40-50 minutes.
