Steak tacos

Shopping List:

  • 2 flank/skirt steaks

  • soy sauce

  • sesame oil

  • white vinegar

  • 1 bunch of coriander

  • ¼ cabbage

  • 1 garlic bulb

  • 2 limes

  • 1 red onion

  • 1 can Mexican tomatoes

  • 1 corn cob or canned corn

  • spicy mayo or normal mayo

  • butter

Pantry Staples:

  • salt

  • sugar

  • oil

  • peppercorns

  • flour

Dairy Free

Servings: 4-5

Steak Marinade -

2 flank/skirt steaks

1/3 cup olive oil

1/4 soy sauce

1 tbsp sesame oil

1/3 bunch coriander

2 cloves garlic

Juice of 1 lime

Salt & Pepper

Sourdough Tortillas - Recipe by Alexandra cooks -

210g flour

7g salt

56g softened butter

100g water

100g sourdough starter

Pickled Onions -

100ml water

100ml white vinegar

20g sugar

5g salt

5 peppercorns

1/2 red onion

Tomato Salsa -

1 can Mexican tomatoes

1 small garlic clove

1/2 red onion

Juice of 1 lime

2 tsp salt

1 tsp sugar

1/3 bunch coriander

Slaw -

1/4 cabbage

1/2 cup spicy mayo

1/3 bunch coriander

1 cob of corn

Ingredients:

Steak Marinade -

  1. Add marinade to a zip lock bag and mix well, then add the steak and coat well. Place in fridge for 24 hours.

Pickled Onions -

  1. Heat half the water and vinegar to dissolve the sugar add the rest of the water and vinegar. Allow to cool.

  2. Slice the red onion in to rings and place in the liquid leave for 2-3 hours. Then place in the fridge

Sourdough Tortillas - Recipe by Alexandra cooks -

  1. Whisk flour and salt together, then smush the butter in until incorporated.

  2. Stir in the water and sourdough starter with a spatula until it becomes a shaggy dough

  3. Turn it out on to your bench and use your hands to knead the dough for about 2 minutes until it becomes a smooth ball

  4. Cut the dough into 12 equal pieces and shape in to a ball.

  5. Cover lightly with plastic wrap and allow to rest between 30 minutes - 2 hours at room temp.

  6. Roll out each ball very thin, and cook on medium heat with no oil until puffy and brown.

Tomato Salsa -

  1. Blend all ingredients in a blender and place to the side.

Slaw -

  1. Cut your cabbage finely and place in a bowl, add the roughly chopped coriander, and cut the kernels off the cooked cob (cook it in the microwave for 4-5 minutes).

  2. Add the spicy mayo and mix well, set aside.

Assembly -

  1. Once your toppings are ready cook your steak to your liking. Leave to rest, then slice against the grain.

  2. Place your tortillas down, then slaw, steak, pickled onions and salsa on top!
