Paua Patties

Servings - 8 Patties

1 cup minced pãua

1 small onion, finely chopped

1/2 cup packed parsley and mint, finely chopped

1 lemon, zest

1/2 cup self-raising flour

1 egg

olive oil for cooking (or cooking oil of your choice)

lemon wedges to serve

Instructions:

  1. Add everything to a bowl and mix until you’ve got a smooth batter. Season with salt and pepper.

  2. When you’re ready to cook, heat up a frypan or BBQ plate and add a little oil. Spoon the mixture into the pan and cook until golden on both sides.

  3. Make sure they’re cooked all the way through — no one wants a soggy/gooey fritter.

  4. Serve with lemon wedges or (my dad’s favourite) a splash of Worcestershire sauce.
