Chicken, Leek & Bacon Pie

This meal works out to cost $31.80AUS and is only $5.30AUS per serve! (This is based on how much of each ingredient you use not the whole ingredient eg 1 egg not 12)

3 chicken breasts, diced

1 leek, finely diced

200g bacon, finely diced

50g butter

1/4 flour

1 cup chicken stock

1 cup cream

1 heaped tsp whole grain mustard

1 tsp dijon mustard

1/2 tsp horseradish

2 bay leaves

2-3 flaky pastry sheets

1 egg

Poppy seeds

Ingredients:

  1. Cut your chicken in to bite sized pieces, and cook in a pan on medium heat until almost cooked through.

    Put to the side and in the same pan cook your bacon until crispy, then add the leeks and cook for 5 minutes until the leeks are soft. Move leeks and bacon to the side and add the butter, once melted fully add the flour and whisk super well!

    Add the chicken stock and cream. The both the mustards, horseradish and bay leaves, mix well. Let it simmer for roughly 10 minutes until thickened, and add your chicken back in and give a good mix.

    Allow to cool for roughly one hour.

    Preheat oven to 200, then pour pie filling in to desired dish. Cut your pastry in to triangles and layer over top of the filling. Whisk the egg and brush it over the top of the pastry, and sprinkle some poppy seeds over top.

    Bake for 45 minutes until golden and crispy, and enjoy.
