Savoury Egg Muffins

Can Be Vegetarian

Ingredients:

1/2 cup Oil

11 Eggs

2 cups Flour

1 tsp Baking Powder

1/2 tsp Baking Soda

3/4 tsp Salt

1 tbsp Sugar

1/2 cup Sour Cream

1 pack Bacon

5 Tomatoes

1 Spring Onion

1 Onion

1 cup Cheese

1/2 bag Spinach

Salt +Pepper

Instructions:

  1. Boil 9 eggs for 6 minutes, transfer to ice bath then peel.

  2. Cook bacon to liking

  3. Preheat oven to 200degC , line 9 muffin cups. Whisk together flour, baking powder, baking soda , salt and sugar. In another bowl whisk together 1/2 cup oil, 1/2 cup sour cream, 1/4 cup water and 2 eggs. Stir wet ingredients in to dry until smooth. Fold in the bacon, tomatoes, green onion, onion, cheese, spinach, salt + pepper.

  4. Fill each muffin cup with 2 tablespoons of mix, nestle a cooked egg in each, cover each each egg with more batter, sprinkle with cheese and bake until golden about 22 minutes.
